Rule of thumb for grilling steak:
Each inch of thickness, needs a total of 10 minutes' of grilling time.
What I do is, assuming 1" thickness:
1. Medium high to high heat on one side for 2'. Flip around the other side for the same time. This is called "searing", i.e. burn the meat to prevent the juice from escaping. 2' x 2 sides = 4 minutes.
2. Flip the steak, move it 90 degree, medium low heat for 3' per side. Total 6 minutes. By turning the steak 90 degrees, it will show diamond-shaped grill marks.
3. Remove steak from grill, cover with foil & let it cool off for 5 - 10'. You will get medium steak. If you want "medium rare", reduce the time for "2"
Re marination, just use salt (I use sea salt which is more salty than table salt) & self-grinded pepper 2 hours B4 grilling.
Please note that steak which you buy in supermarket is usually 3/4" thick, then total grilling time is 7.5'.
