I think you nailed the reason why people like Kimchis, but totally missed two of the main selling points of Dimsum. Support for Chinese products is a minor factor.
Generally speaking, Dimsum/Dumpling sell freshness since some are really new or part-time; as opposed to veteran Kimchis who take 10+ customers per day and have been rotated between different cities around the world.
The other main reason people prefer Dimsum is because most of them are natural. They usually don't have fake boobs or surgery done on their faces before.
